Summer Oats to go

  • 1/4 cup rolled oats
  • 1/3 cup milk
  • 1/4 cup yogurt
  • 1 generous tbsp grated ginger (can be omitted)
  • 1-2 tsp maple syrup (if desired)
  • 1 tbsp chia seeds

Mix all the ingredients including any additional add-in’s like fruit or nuts.  Stir till combined.  Place in refrigerator or leave out overnight (covered) to digest.  If leaving on the counter to ferment wait to add fruits and nuts until ready to placing in refrigerator.   Will be ready to eat in the morning.  Keeps for up to 5 days, so make many at a time for nutritious grab and go breakfasts.  Get creative with add-in’s.  Some combinations we like are

*Banana Peanut Butter–skip the ginger

*Cinnamon Cardamom Cranberry


*Strawberry Vanilla, add just a touch of vanilla extract

Country Boy Breakfast, groat style

serves two

  • 1/2 cup cooked groats
  • 2 tsp fat (we like to use coconut, bacon or butter)
  • 1 tbsp fresh grated ginger
  • drizzle of sesame oil
  • 5 kale leaves, cut into slivers
  • dash of salt
  • leftover pulled pork from last night’s dinner 🙂
  • homemade aioli
  • 2 eggs


Melt fat in pan, add all other ingredients into pan.  Cook on medium to medium low for 5-10 minutes .  You may need to adjust heat according to pan and stove top.  You will know they are done when they are crispy and slightly browned.  When finished place on plate.   Top with the fried egg and warmed pulled pork.  Finish with a drizzle of homemade aioli.  You’ll never go back to biscuits again.
